Smoked Turkey and Bacon Panini – Sun Rose Café (Colorado)

On a blustery day in Longmont, Colorado, we found our way to the Sun Rose Cafe.  It was nestled in between several shops in a very quaint downtown area.  When we walked in, it seemed like everyone from the cashier to what I like to call the “sandwich masters” greeted us.  I love this kind of friendly place.  After we were seated the next thing I noticed was the walls covered with (what I assume) local artwork.  Big fan of the art as I have no artistic ability myself.  I ordered the soup (a delightful Tomato Bisque) and half sandwich.  A panini with turkey, bacon, avocado, sweet basil vinaigrette, sun dried tomatoes, provolone and Dijon mayo on sourdough.  Outstanding combo.  As I was with family (my brother Rhett and my Sister In Law Tracie) I was able to try their sandwiches as well.  Rhett’s Speziato was a bit too spicy for this gal, but it was full of the high quality ingredients…Hot Sopressata, spicy Calabrese and Capicolla, topped with mustard, lettuce, tomato, pepperoncini and sherry vinegar with Horseradish Havarti on marbled rye.  If my new sis wasn’t the sweetest gal ever, I may have wrestled her for the rest of her Salami and Pesto panini…..fresh mozzarella and Calabrese, dry salami, tomato, provolone and housemade pesto served on rosemary foccacia.  They also offered delightful local brews and lavender lemonade.  I believe this fantastic place was a strategic ploy to get me to move to Colorado……Aaahhh, if only there were beaches next door.
