On a wind filled day in Tampa Bay, The Husband and I were blowing around post-Arthur Murray dance lesson in need of lunch. Through the magic of FourSquare, FoodSpotting, and the Google Map Machine, we luckily found Pinky’s Diner. The place is crazy busy and super small; I literally crawled over a toddler to gain entrance. We signed in and were seated by the kitchen in mere moments. The walls are covered with maps and old school decor. The waitress took care of us with a quickness. Pinky’s is known for their breakfast menu; as sandwiches are imprinted on my DNA, I went with the lunch. This was the best grilled cheese I have had in a long time. Provolone, Swiss, and Cheddar, (I substituted the Chef’s homemade bacon for the prosciutto-can’t go wrong there), tomato and Basil on grilled whole wheat. To die for. The Roast Beef was also pretty tasty: Roast Beef, caramelized onions, Provolone, tomato, and tomato-garlic aioli on a toasty warm onion roll.
